He was a crowd favorite on 'America's Got Talent' the young Jonathan Burkin turns up the heat with his flaming twirling batons. Plus warm up those vocal chords, the audience is playing 'Sing It or Wing It' but this time it's the TV show theme edition.

Ingredients
Makes 1 1/2 quarts

1 lb of applewood smoked
bacon

½ cup of dark brown sugar

3 cups heavy cream

1 cup milk

1 1/4 cups sugar

4 egg yolks

1 vanilla bean, split

Directions
Preheat oven to 400 degrees.
Lay bacon on baking sheet, sprinkle the brown sugar over the bacon and place in the oven. Bake for 14-16 minutes. Let cool and chop fine.

Combine the cream, milk, vanilla bean and sugar in a heavy saucepan and cook over medium-high heat until hot and the sugar is completely dissolved, stirring occasionally. When done, remove vanilla bean and discard.

In a small bowl, beat the egg yolks until smooth. Slowly whisk in 1 cup of the hot cream-milk mixture. Return the yolk mixture to the saucepan, beating constantly. Cook over medium heat, stirring continuously, until the mixture coats the back of a wooden spoon, 6-8 minutes. Do not let it boil.

Strain the mixture into a clean bowl and let it cool completely. Stir in bacon and add liquid nitrogen* in small amounts until thickened, about 2 liters.

Ingredients
2 cups broken up old bread (crust removed)

2 eggs

1/2 cup milk

1 cup Parmesan cheese

1/2 cup chopped yellow onion or shallot (I don't use garlic)

1/4 cup chopped parsley

salt (to taste)

red pepper (to taste)

1 pound ground chuck

1 pound ground pork

8 ounces ground spicy sausage (Dark and light turkey meat can be used instead)

Directions
In a large bowl combine gently: old bread, eggs, milk, paremsan cheese, yellow onion, parsley, salt, and red pepper.

In another large bowl fold gently together: ground chuck, ground pork, and ground spicy sausage.

Now combine all ingredients together, but be sure to fold gently and briefly or the meatballs will be tough.

Shape the meat into small balls in the size you like.

Lay the meatballs on a pan, cover and chill for at least 1 hour.

Option 1: Heat 1 cup of olive oil in a large skillet, over medium-high heat. Brown the meatballs on all sides (approx. 5 minutes).

Option 2: Brown the meatballs in the oven at 375 degrees for approx. 15 minutes.

After browning of your choice, cook meatballs in your favorite tomato sauce for 1.5 hours either on top of the stove over a low flame in a covered pot or in the oven at 350 degrees in a covered roasting pan.

Let the meatballs cool naturally in the sauce in the refrigerator and heat up at a later time, or enjoy immediately served with spaghetti, of course.
