Ingredients
Salmon and Mussels:
4 6-oz salmon fillets, boneless and skin removed
16 mussels, cleaned and de-bearded
2 tablespoons toasted fennel seeds
2 tablespoons toasted coriander seeds
1/2 tablespoon Kosher salt
1/4 teaspoon freshly ground black pepper
Extra-virgin olive oil
Juice of 1 lemon
3 scallions, finely sliced, for garnish
ΒΌ bunch cilantro, for garnish
Couscous:
1 cup couscous
2 tablespoons chopped fresh cilantro
1/2 teaspoon lemon zest
8 frozen cubes of chicken stock (about 2 tablespoons per cube)
Kosher salt and freshly ground black pepper
Curry Butter:
1 stick of unsalted butter
2 tablespoons curry powder
1 fresh red chile, roughly chopped
1 clove of garlic, peeled
Kosher salt and freshly ground black pepper |
Directions
Yield: serves 4
Time: 45 minutes
Pop 2 sheet trays into the oven and preheat to 350 degrees F.
Begin by making a seasoning with fennel and coriander seed and salt and pepper. Pound spices with salt and pepper in a mortar and pestle until you have a rough powder. Make curry butter by combining ingredients in a food processor and pulsing until smooth. Season salmon with half of the spice mix and set aside remaining mix for couscous. In a large mixing bowl combine couscous, cilantro, lemon zest and remaining seasoning. Stir well to combine. Then divide evenly amongst four large pieces or parchment (big enough to create a folded pocket for the salmon. Nestle into the couscous 2 frozen chicken stock cubes for each portion. Top with the piece of salmon and then smear a tablespoon of the curry butter on top. Squeeze lemon juice over the top of each piece of fish and couscous then set 4 mussels around the fish in each packet. Fold over the parchment to create a pocket and trim paper to make a heart shape. Crimp over the edges, working from one end to the other to secure the paper tightly then brush with olive oil so the paper doesn't burn. Carefully transfer the parchment pockets to the hot sheet trays (you will probably need to put 2 per tray) then bake in the oven for 15 minutes.
When done, the paper will puff up. Cut open tableside with scissors and shower with fresh chopped scallions and cilantro.

Matt Dallas' interview was great; he had so much to say, but I realize you ran out of time. I would have loved to hear more of his stories - he's a great storyteller and a very personable guy.
Maybe you can him back on to answer questions from the fans. We're always willing to help make a list of things we'd like to ask Matt Dallas or any of the Kyle XY actors.
By the way, there was a lost opportunity today: Carrie Fisher was Princess Laia in the Star Wars movies. Matt Dallas revealed this summer that he's never seen a single Star Wars movie. What a chance to remind him that he PROMISED us that he'd watch them all before next year's convention! hahaha

Bonnie has a natural talent of bringing out the best in people, plus her natural humor. I think she is under-rated - I think she is an example of the good 'ole Lucille Ball humor and comedy and it is so fitting for her. I think she should have a been given more acclaim previously. Love her and she needs to come here to PA to give us a lift. :)

WOW ! I just found "THE BONNIE HUNT SHOW" while being home on medical leave. I am so excited! She comes on at 2pm in the Detroit , Mich. area. I loved seeing Carrie Fisher and hear her mom, Debbie! Bonnie's mom is so cute ! They are lucky to still have their moms around. I may try that recipe - when I'm up to cooking again. When I go back to work, I'll have to tape her show! Love your show and your energy and love of family. There is a special talented family of 7 kids, who are very talented, can sing, dance, and play different instruments. The whole family of high moral values puts on an outstanding high energy show. I just saw them the first time on New Years.
They are the Hunter Family Fiddlers and would be great entertainment for your show. Since you are from a large family, I thought you might want to hear about them. Their 10 year old son just placed in the World Irish step-dancing competition.
I know you would be impressed and they would be an asset on your show.
