SHOW RECAP
Being the daughter of Debbie Reynolds and Eddie Fisher hasn't been that easy for Carrie Fisher. She has a new memoir out and will share with Bonnie why she has diagramed out her family tree of marriages and remarriages to make sure her daughter's potential date doesn't turn out to be a relative. On 'Kyle XY' Matt Dallas doesn't have that problem as he plays a teenager who can't recall having a family or a childhood for that matter. If you made a resolution to eat healthier then you'll want to catch chef Tyler Florence as he prepares a healthy dish to help you keep that waistline in check. Plus, it's a new year and a new edition of everyone's favorite mom - 'Ask Alice' is back!

Salmon Baked in Parchment with Couscous and Curry ButterPrint this Recipe

Ingredients

Salmon and Mussels:
4 6-oz salmon fillets, boneless and skin removed
16 mussels, cleaned and de-bearded
2 tablespoons toasted fennel seeds
2 tablespoons toasted coriander seeds
1/2 tablespoon Kosher salt
1/4 teaspoon freshly ground black pepper
Extra-virgin olive oil
Juice of 1 lemon
3 scallions, finely sliced, for garnish
ΒΌ bunch cilantro, for garnish

Couscous:
1 cup couscous
2 tablespoons chopped fresh cilantro
1/2 teaspoon lemon zest
8 frozen cubes of chicken stock (about 2 tablespoons per cube)
Kosher salt and freshly ground black pepper

Curry Butter:
1 stick of unsalted butter
2 tablespoons curry powder
1 fresh red chile, roughly chopped
1 clove of garlic, peeled
Kosher salt and freshly ground black pepper

Directions

Yield: serves 4
Time: 45 minutes

Pop 2 sheet trays into the oven and preheat to 350 degrees F.

Begin by making a seasoning with fennel and coriander seed and salt and pepper.  Pound spices with salt and pepper in a mortar and pestle until you have a rough powder.  Make curry butter by combining ingredients in a food processor and pulsing until smooth.  Season salmon with half of the spice mix and set aside remaining mix for couscous.  In a large mixing bowl combine couscous, cilantro, lemon zest and remaining seasoning.  Stir well to combine. Then divide evenly amongst four large pieces or parchment (big enough to create a folded pocket for the salmon.  Nestle into the couscous 2 frozen chicken stock cubes for each portion.  Top with the piece of salmon and then smear a tablespoon of the curry butter on top.  Squeeze lemon juice over the top of each piece of fish and couscous then set 4 mussels around the fish in each packet.  Fold over the parchment to create a pocket and trim paper to make a heart shape.  Crimp over the edges, working from one end to the other to secure the paper tightly then brush with olive oil so the paper doesn't burn.  Carefully transfer the parchment pockets to the hot sheet trays (you will probably need to put 2 per tray) then bake in the oven for 15 minutes.

When done, the paper will puff up.  Cut open tableside with scissors and shower with fresh chopped scallions and cilantro.

Today's show was good - great guests, not enough time. Loved the bit with your mom. She's adorable and very funny.

Matt Dallas' interview was great; he had so much to say, but I realize you ran out of time. I would have loved to hear more of his stories - he's a great storyteller and a very personable guy.

Maybe you can him back on to answer questions from the fans. We're always willing to help make a list of things we'd like to ask Matt Dallas or any of the Kyle XY actors.

By the way, there was a lost opportunity today: Carrie Fisher was Princess Laia in the Star Wars movies. Matt Dallas revealed this summer that he's never seen a single Star Wars movie. What a chance to remind him that he PROMISED us that he'd watch them all before next year's convention! hahaha

Thanks for a great show.

Bonnie

Me and my family watch every afternoon, we watch you then Ellen. What I wanted to comment about is the video hook-up with your Mom. Whats up with that??? With all the high tech gadgets now days, cant you do better? Or is that the effect your going for? She looks like she's on a web-cam.

I love your show! It's such a refreshing and new kind of Talk show. You seem like such a nice person in reality on and off camera. I hope your show lasts for many years. I often laugh out loud when watching your show. Thanks!

todays episode was great. thanks for having matt dallas on.

Hi Bonnie!

I have to admit this is my first time watching the show and only because Matt Dallas was your guest, but I must say that I loved watching the entire show! You are so funny and I enjoyed hearing all your stories. I don't think I've ever laughed so much watching a talk show. Consider me a new fan of your show.

Thanks for having Matt Dallas as a guest. He's such a great actor and a terrific person. It was the highlight of my day watching him swing down that pole. Haha! That was awesome! Hope to see him return again. I'd love to be in the audience if he's ever invited back.

I love watching your show! I just printed Chef Tyler's salmon recipe. I like that you spend quality time with each guest.

Bonnie has a natural talent of bringing out the best in people, plus her natural humor. I think she is under-rated - I think she is an example of the good 'ole Lucille Ball humor and comedy and it is so fitting for her. I think she should have a been given more acclaim previously. Love her and she needs to come here to PA to give us a lift. :)

Loved the show today! Carrie Fisher is one of my favorite writers. Finally a talk show I can relate to. Keep up the great work.

HI Bonnie
Love your show.It always bring a smile and laugh to my day.I can tell you grow up in Chicago, after watching your cooking segments,I just wanted to know are you copying Ray Rainer or what? Is there a jump-suit and post-its in your future? Just joking. Love ya.

Hi Bonnie,

I just love your show and was praying for a new wholesome talk show that would be something I could watch when I retired this past year. Well, I'm glad I got it in your show. I am one of 5 girls and plan to send for tickets to your show. Your humor and darling accent is so refreshing. Your one liners just floor me and keeps me laughing. God Bless you and keep up the good work.

WOW ! I just found "THE BONNIE HUNT SHOW" while being home on medical leave. I am so excited! She comes on at 2pm in the Detroit , Mich. area. I loved seeing Carrie Fisher and hear her mom, Debbie! Bonnie's mom is so cute ! They are lucky to still have their moms around. I may try that recipe - when I'm up to cooking again. When I go back to work, I'll have to tape her show! Thanks, Bonnie - you have a great show and made me laugh!

BONNIE! Hello from Alberta Canada!!!

Love your show and your bright personality is exactly what I need in my day.

Your show airs at 1 pm here in Edmonton so I try to have coffee time then.

I come from a large family too, so I enjoy when you share, we have a lot in common!!!

Louise

I just love your show, it's so different and refreshing to watch. Your whole crew really do a great job. You are so down to earth and funny, love segments with your mother, my mother has same views. Enjoy all your guests and look forward to all upcoming shows. Also your
Christmas decorations were really beautiful. Thank You

Hi Bonnie, How true your thoughts on the Holidays! It's refreshing knowing I'm not the only one who loves the "feeling", yet gets so sad missing people who had once been in our lives.
I find I plan my day around the time your show is on-it's my daily dose of laughter. Thanks so much for being you!

I've been looking for a daytime talk show without all the shrillness; one I could just watch and be entertained and learn a little something now and then. THANK YOU, BONNIE! I enjoy the show when I can catch it and loved today's show. It was cool seeing you and Carrie Fisher interact with your Moms. If you asked my married daughter she would tell you I am like your Mom. Anyway, thanks again for giving me something to watch now that Tony Danza is off the air!

Mary Jane, Streetsboro, Ohio

I record your show every day but on tuesday show, for some reason the intro was not recorded with Brian Williams wife and you(Bonnie). Is there a chance to see it??

Thanks, Roseann

Hi,
Want to correct name of talented family. It is actually the "Hunt Family Fiddlers and Irish dancers. Same last name as yours.

Website is: http://www.huntfamilyfiddlers.com/

Hi Bonnie,
Love your show and your energy and love of family. There is a special talented family of 7 kids, who are very talented, can sing, dance, and play different instruments. The whole family of high moral values puts on an outstanding high energy show. I just saw them the first time on New Years.
They are the Hunter Family Fiddlers and would be great entertainment for your show. Since you are from a large family, I thought you might want to hear about them. Their 10 year old son just placed in the World Irish step-dancing competition.

I know you would be impressed and they would be an asset on your show.

Unfortunately, I missed the last part of today's show - I wanted to see the part with Matt Dallas and operator error caused me to miss it. I enjoyed the rest of the show with Carrie Fisher and Tyler Florence.
Is this show available somewhere on the net?

To Melanie who was asking about the boxer video:

Here is a link to the video Bonnie showed. You can forward that to your co-workers:
