Ingredients
Salmon and Mussels:
4 6-oz salmon fillets, boneless and skin removed
16 mussels, cleaned and de-bearded
2 tablespoons toasted fennel seeds
2 tablespoons toasted coriander seeds
1/2 tablespoon Kosher salt
1/4 teaspoon freshly ground black pepper
Extra-virgin olive oil
Juice of 1 lemon
3 scallions, finely sliced, for garnish
ΒΌ bunch cilantro, for garnish
Couscous:
1 cup couscous
2 tablespoons chopped fresh cilantro
1/2 teaspoon lemon zest
8 frozen cubes of chicken stock (about 2 tablespoons per cube)
Kosher salt and freshly ground black pepper
Curry Butter:
1 stick of unsalted butter
2 tablespoons curry powder
1 fresh red chile, roughly chopped
1 clove of garlic, peeled

Directions
Yield: serves 4
Time: 45 minutes
Pop 2 sheet trays into the oven and preheat to 350 degrees F.
Begin by making a seasoning with fennel and coriander seed and salt and pepper. Pound spices with salt and pepper in a mortar and pestle until you have a rough powder. Make curry butter by combining ingredients in a food processor and pulsing until smooth. Season salmon with half of the spice mix and set aside remaining mix for couscous. In a large mixing bowl combine couscous, cilantro, lemon zest and remaining seasoning. Stir well to combine. Then divide evenly amongst four large pieces or parchment (big enough to create a folded pocket for the salmon. Nestle into the couscous 2 frozen chicken stock cubes for each portion. Top with the piece of salmon and then smear a tablespoon of the curry butter on top. Squeeze lemon juice over the top of each piece of fish and couscous then set 4 mussels around the fish in each packet. Fold over the parchment to create a pocket and trim paper to make a heart shape. Crimp over the edges, working from one end to the other to secure the paper tightly then brush with olive oil so the paper doesn't burn. Carefully transfer the parchment pockets to the hot sheet trays (you will probably need to put 2 per tray) then bake in the oven for 15 minutes.
When done, the paper will puff up. Cut open tableside with scissors and shower with fresh chopped scallions and cilantro.

I was thinking that Tyler would be a great match for you....If of corse he isn't married....better then Brian..not that Brian isn't a nice guy ....he was just a bit too "stiff" for you.....You need to be your own "love match" web sight right there on your show....Just start inviting all interesting men you have seen or come across to your show....and the Boom!!!! I have just recently started watching this talk show and I just have to say that this show has become the highlight of my every week day, every moment is full of laughter and fun. Bonnie, you are downright hilarious and so funny. I never gush over celebs but you have fast become one of my favorites.

Bonnie,would you tell your good friend Brian Williams that he might be a hot shot reporter but he needs to get his facts straight. I am 68, a great-grandmother, twice over, and an AARP member but I don't have varicose veins! His thinking is a little out dated. Being in AARP doesn't mean I don't have a lot of good years left also, as he implied on your show!

I am a big fan and love watching your show Bonnie. But you are starting to be like the women on the View and interrupt the guest too much. You ask them a question then you break in with a story about yourself. And they keep talking and I miss what they are saying. I would like to hear your story but would like to hear the rest of the guests story's too. Sorry just a little constructive criticism I hope. :)

I love your show. You are such a neat lady. I especially love to see your Mom. My Mom will be 92 and is a pistol. She still shovels snow and sometimes even goes next door and does theirs. She is a real piece. I am so blessed and so are you to still have our Moms. I wish I lived next door to mine but she is 600 miles away and I miss her every day. When my Dad was alive he always told me he was pushing every day to move the state between us.
The show today was great with Carrie. I am anxious to read her book. She is also blessed with a special Mom.

People who judge you (or Carrie) by your weight are rude, inconsiderate, and unintelligent. The person you are- is the person you are inside, the outside is just the package, not the gift. I have always thought that you don't give yourself enough credit concerning your appearance. You are a lovely person with a great personality and kindness and love in your heart NOT to mention very attractive. As long as you are healthy don't worry about what other people think of your weight
