Ingredients:
1 ½ cups fine -ground cornmeal
1 ½ cups all-purpose flour
1 cup of Bitter Chocolate Powder
2 teaspoons baking powder
2 teaspoons baking soda
Pinch of salt
½ cup of melted butter
3 tablespoons sugar
2 egg yolk plus 1 whole egg
beaten
4 cups buttermilk

Directions
Place dry ingredients in a bowl and whisk them. Add the eggs and buttermilk . Stir in ½ cup of melted butter and set aside batter to rest for 30 minutes. Heat a nonstick griddle over medium heat. Add the pancake batter onto hot griddle, scooping that out with a ladle, and cook until bubbles form around the edges. Flip pancakes and continue cooking on second side until set and golden brown.
For the Strawberry:
8 oz of fresh diced strawberry
1 cup of Sambuca and 2 tbsp of brown sugar
½ cup of Balsamic Vinegar
1 little piece of butter
Place the strawberry in a really hot pan add the sugar and the balsamic and flambé with the sambuca add the butter and reduce, place now the strawberry on top of the pancake. |
